He currently holds the position of Master Blender at Industria Licorera de Caldas, where he also emphasizes innovation and research in new product development. Let’s know more about him in this interview: - TRL: What does rum mean to you, and what made you fall in love with this drink? When did that happen? This love affair began many years ago when we started distilling tafias with unique variations. These tafias almost laid the foundation for the character of our Ron Viejo de Caldas. Distillation is crucial for producing high-quality rum. When you distill your rum, whether using a pot still or a column still, that’s when you truly fall in love with the process. - TRL: What do you believe are the three essential characteristics that define high-quality rum? First, the type of distillation; second, the aging process; and third, the blending. These three aspects are fundamental. If it is not properly distilled, it will not age effectively, and if it does not age well, you will have nothing to blend. They are essential. Check out this new paper published by Gaganpreet Singh, Rajesh Kumar and Martin J. Talavera. It is titled, "Consumer Acceptance of Novel Lucuma Fruit Ice Cream in the US Market." This study explored the use of lucuma fruit powder in an ice cream formulation for the US market. Six ice cream prototypes were developed using five different lucuma fruit powder variants. A central location test was conducted with frequent ice cream consumers (n = 106) to assess acceptance, attribute intensity rating, ideal intensity levels and purchase intent against a control sample with caramel flavor. Accomplished my oral presentation on my industrial experience which was undertaken at Guinness Nigeria Pls, Lagos. In which I presented on the topic " YEAST PROPAGATION AND MANAGEMENT IN BEER PRODUCTION" starting up with how the yeast convert sugar into alcohol and CO2 and flavour compounds, shaping the beers' flavour profile, aroma and overall character. Yeast flocculation is the process by which yeast clumps together and settle out of the beer during brewing. Which have two main categories 1. Top fermentation :Ales which ferment at warmer temperature 2. Bottom fermentation: lagers which ferment at cooler temperature. Yeast propagation and management play a critical role in determining the quality and consistency of beer. Effective yeast management practices, including proper propagation, pitching and fermentation techniques can significantly impact the flavour, aroma and overall character of the final product. #futa #SIWES #GUINNESS #MICROBIOLOGY

The eternal Congress mash, central to malt quality analysis, has its origins at the German Brewing Congress of 1817. The brewing industry formally adopted and codified the Congress mash at the beginning of the 20th Century.
