The eternal Congress mash, central to malt quality analysis, has its origins at the German Brewing Congress of 1817. The brewing industry formally adopted and codified the Congress mash at the beginning of the 20th Century. This raises the question, is the Congress mash still fit for purpose today, or "are the days of Congress mashing over?"
