In our previous post, we asked our community about the purpose of homogenization in the food industry, providing 3 possible answers. Which one was correct? All of them. Homogenization helps to micronize suspended solid particles or improve the dispersion of denser liquid components (in the case of emulsions), resulting in a more uniform and stable product over time. Homogenized beverages, yogurts, or sauces look better. The micronization of particles enhances the natural color of the products (without the need for added colorants), making them more visually appealing and attractive to consumers. Micronization releases the aromas contained within cells, intensifying the product's flavor without the need for added flavorings. Additionally, by creating a more uniform and compact mixture, the texture and mouthfeel are significantly improved. Check out this new paper published by Gaganpreet Singh, Rajesh Kumar and Martin J. Talavera. It is titled, "Consumer Acceptance of Novel Lucuma Fruit Ice Cream in the US Market." This study explored the use of lucuma fruit powder in an ice cream formulation for the US market. Six ice cream prototypes were developed using five different lucuma fruit powder variants. A central location test was conducted with frequent ice cream consumers (n = 106) to assess acceptance, attribute intensity rating, ideal intensity levels and purchase intent against a control sample with caramel flavor. This pigment can be extracted and used as a natural food coloring. 2️⃣ Stable in beverages: The phycocyanin pigment in blue spirulina is relatively stable in beverage applications, allowing it to retain its blue color when mixed into drinks. 3️⃣ pH stability: Blue spirulina colorant is stable over a wide pH range, from acidic to basic, making it suitable for use in both acidic and non-acidic beverages. 4️⃣ Dosage: Only small amounts of blue spirulina are needed to impart a vibrant blue color.
