We're honored to host the maker and affineur of our Gruyère, Christian and Philippe, in town from Switzerland. Christian and Philippe will lead our Meet the Maker event at our Bleecker Street shop this Saturday, teaching our customers about their authentic cheesemaking process and breaking down a giant wheel of Gruyere, giving out samples and making fondue for everyone to enjoy.

I'd like this to be true. I've seen mixed data on this. You need to have a really efficient system setup for this to become worth it. Retrieving, cleaning, and preparing used wine bottles is itself very energy intensive. The easiest and best first step is just lighter bottles. But if we can get those efficient systems in place to reuse, great.
A wine bottle is a single-use item. It doesn't have to be this way. Stratus Vineyards and Circulr have partnered up to test the refill and reuse of wine bottles. There is an immense amount of energy spent to produce and fill a bottle, it only makes sense to refill them. According to Tyler De Sousa at Circulr, "Once the label's off, the hard part is done." After two successful editions, the European Beer Star #FutureAward is entering its third round this year. But what added value do breweries gain by taking part? Stefan Stang, Managing Director, Private Brauereien Bayern e.V.: Participation in the Future Award allows breweries to compare themselves with other industry players. The objective jury provides the breweries with valuable feedback from an "outside perspective" with individual recommendations for sustainable measures in the business, allowing them to improve step by step. After all, #sustainability is a continuous process in which it is important to consistently take one step at a time. The added value is confirmed by the previous #winners. And: there is really no reason not to take part. Participation in the Future Award is free of charge and the effort required to complete the questionnaire is manageable.

Excited to share that Diageo is constructing a greenfield 2.0mhl/a brewery in Ireland! · Project Ambition: Diageo is developing a new 2.0mhl/a brewery in Ireland, with the initial volumes being Ale & Lager. The brewery will be leading in terms of energy efficiency and low water usage. · Sustainability: The brewery will implement Diageo’s sustainable vision for 2030 compliance via the use of technologies such as Renewable heating plant, heat pumps, biogas boilers and water recovery technology. · Energy Innovations: Project Black will implement best-in-class energy and water innovations, delivering a Carbon Neutral Solution with an approx. 50% reduction in energy consumption. · Reduced Water Usage: Water recovery up to 80% of the brewery effluent, segregation of product and service water with further segregation for pushouts, improved water ratio. · Embodied Carbon: Project Black will be light-housing Embodied Carbon tracking to help reach 2030 Sustainability targets, with a pledge to reduce Scope 3 emissions by 50%.
We have turned the sod on Ireland’s first carbon-neutral brewery at Littleconnell, Newbridge, Co Kildare! After announcing our plans in 2022, we’re glad to have begun construction on our new €200m state-of-the-art brewery, that will brew our lagers and ales including Rockshore, Harp, Hop House 13, Smithwick’s, Kilkenny and Carlsberg, facilitating enhanced capacity for the production of the fast-growing Guinness 0.0 at the traditional home of Guinness at St James’s Gate, Dublin. With a capacity of 2 million hectolitres, it will be the second largest brewing operation in Ireland outside of St James's Gate, and will go on to support the growth of overall beer exports from Ireland. All this would not be possible without our stakeholders throughout the process; Enterprise Ireland, Kildare County Council and Minister of State for Agriculture and TD for Kildare South, Martin Heydon.
