𝐓𝐡𝐞 𝐎𝐫𝐢𝐠𝐢𝐧𝐚𝐥 𝐕𝐞𝐧𝐝𝐢𝐧𝐠 𝐌𝐚𝐜𝐡𝐢𝐧𝐞𝐬 𝐒𝐞𝐫𝐯𝐞𝐝 𝐆𝐢𝐧! at the sign of the black cat This week’s cocktail is the Casino. I hunted to the end of the internet and back again, but there doesn’t seem to be any record of why it is so named. So, the story this week has to take a different turn. There are two classic cocktails that are very similar, well three actually. The Casino is a bit like an Aviation without the Crème de Violette, which is then a lot like a Tuxedo in which the lemon juice is replaced by Vermouth, and so we have the holy trinity of gin based cocktails. What makes them different is that the Casino and the Tuxedo both use Old Tom Gin and I had been avoiding them because I didn’t think I had any. Then, last week, when tidying up the spirits I came across a present of a Japanese Old Tom, and this drink sprang to mind. To understand what Old Tom is and why it exists, a little history lesson is needed. In the late 1600's, to counter the incoming flood of French Brandy, the British government encouraged the distillation of grain based spirits, known generically as Gin. As this was prior to licensing or excise duties, the production became rife leading to a period know as the Gin Craze in the first half of the 18th century where a good proportion of London was almost permanently drunk. The British Government realised that a largely inebriated population was not necessarily a good thing, and made moves to limit production. Much like other things that people want but that the government tries to restrict, this pushed the production and sale of Gin underground. Due to the lack of quality control and the, no doubt, dubious conditions in which the Gin was created, much of it would have been politely described as “rough”, but the edge was taken off, much like with cocktails themselves, by adding a little sugar to the mix. At around the same time, the licensing acts taxed retail sales of Gin at 20 shillings per gallon (in today’s terms that’s £200 per gallon or £1.25 per 1oz shot) and required the sellers to take out a license costing, in today’s terms, £10,000. To get around this, the gin sellers went into stealth mode, and you could spot a seller of gin by a small black wooden cat sign on a building. Under the sign would be a slot where you could insert your money and the ‘barman’ would push out a shot of Gin in return. So, you have terrible quality Gin sweetened by sugar that you can only get under a sign of an Old Tom cat, and that is the origin of Old Tom Gin. Old Tom, not surprisingly, fell in popularity, and was, for a while, almost impossible to get, but the craft cocktail revival has brough it back into fashion, hopefully to a higher quality than before. Back when we scouted out potential premises for our distillery a designated cellar door space was somewhere on the 'nice to have' list. Our main concern was to have enough space for the production equipment and a good storage area (pallets and pallets of bottles and boxes and whatnot take up a LOT of space). We were so lucky we ended up with a decent cellar door and enough tasting space for groups up to 10. Ever since we got our off-license, cellar door sales have generated a crucial income stream - right up there with trade, often surpassing it, especially in off-season months. But what's more important: the direct feedback from consumers has been invaluable. Every time someone comments on what flavours they pick up on and what they particularly like, we take note. And those notes help us make better spirits. In just under 2 years we've collected 22 medals across our four core range gins and we're obviously incredibly stoked about the industry recognition. But what we care even more about is whether our consumers enjoy the gin. In the end it really comes down to the old business adage: never lose sight of your target audience.

What's one downfall of a round of cocktails? The time it takes for each cocktail to be created! Having a wide range of various cocktails can delay the rhythm of the bar as each cocktail takes time to create from scratch.
