    Unlike many brands that use ROI as the deciding factor for technology adoption, California Fish Grill took a different approach. The leadership team focused first on establishing speed of service and kitchen behavioral consistency through Curbit’s analytics—specifically targeting “KDS bumping behavior” and misaligned quote times. “We were blown away by the ROI potential,” said Patrick Waiyawaytar, vice president of IT at California Fish Grill. “But our goal isn’t just immediate gains—it’s long-term operational excellence. That starts with consistency. Curbit’s analytics are helping us uncover the behavioral patterns that impact guest experience the most, and we’re using that as our foundation.” The 30-day Curbit pilot included over 67,000 orders across six California Fish Grill locations in a controlled A/B test format.     So, this interview is kind of a big deal for me. 𝗜 𝗳𝗶𝗿𝘀𝘁 𝗺𝗲𝘁 Peter Romeo 𝗯𝗮𝗰𝗸 𝗶𝗻 𝟮𝟬𝟭𝟯 𝗳𝗿𝗲𝘀𝗵 𝗼𝗳𝗳 𝘁𝗵𝗲 𝘁𝘂𝗿𝗻𝗶𝗽 𝘁𝗿𝘂𝗰𝗸 𝗮𝘁 𝗠𝗨𝗥𝗧𝗘𝗖 𝗼𝗿 𝗙𝗦𝗧𝗘𝗖 𝗶𝗻 𝗡𝗲𝘄 𝗢𝗿𝗹𝗲𝗮𝗻𝘀. I was new at Crunchtime and really didn't know much about the industry or anyone in it. Somehow I managed to bump into Peter, and I struck up a conversation with him. Next thing I know, he invites me to tag along with him to some muckety-muck parties and wisks me around, not too dissimilar to when 𝗛𝗲𝗻𝗿𝘆 𝘄𝗶𝘀𝗸𝗲𝗱 𝗞𝗮𝗿𝗲𝗻 𝗮𝗿𝗼𝘂𝗻𝗱 𝘁𝗵𝗮𝘁 𝘀𝘄𝗮𝗻𝗸𝘆 𝗿𝗲𝘀𝘁𝗮𝘂𝗿𝗮𝗻𝘁 𝗶𝗻 𝗚𝗼𝗼𝗱𝗳𝗲𝗹𝗹𝗮𝘀. 𝘐 𝘸𝘢𝘴 𝘦𝘯𝘤𝘩𝘢𝘯𝘵𝘦𝘥. :-) Anyhow, with his four decades of industry connections, awards, and journalism pedigree, Peter, a former managing editor of NRN, QSR Magazine, and Restaurant Business, is simply both 𝗮 𝗴𝗲𝗻𝘁𝗹𝗲𝗺𝗮𝗻 𝗮𝗻𝗱 𝗮 𝘀𝗰𝗵𝗼𝗹𝗮𝗿.
