About us
Located in Chicago’s historic Stockyards, Chicago Meat Authority, Inc. is an independent processor of quality beef, pork and chicken.
CMA focuses on selling the hotel, restaurant, and institution markets. We also specialize in custom cuts for further processors including but not limited to grinding operations, deli and jerky manufacturers, and the prepared entrée market.
CMA opened its doors on January 22, 1990. In that first year, the company transacted $6 million in sales out of a single 10,000 square foot facility. Today, 30 years later, CMA produces sales in excess of $150 million and operates out of two facilities in a campus environment encompassing 80,000 square feet. The company employs over 100 specialty butchers who customize meat for selective chefs.

This week Chicago Meat Authority celebrated our 35th year in business! To commemorate the anniversary, our President and Founder Jordan Dorfman addressed all CMA employees with a state-of-the-union speech in our plant. Jordan also handed out career-service awards to those team members celebrating 5-, 10-, and 25-year anniversaries with CMA. 35 years in business is no small feat! To be successful in the meat industry takes years of hard work, dedication, loyal partners, and of course great meat. Over the last 35 years, we have created a better way for food service professionals and further processors to buy meat - with assured quality and integrity. To ensure continued quality and integrity with our products and services, we have grown with the times and upgraded capabilities, products, packaging, and more over the years. Starting at just 12 employees in 1990, CMA now has over 200 full-time team members to keep up with our worldwide customer base that needs quality beef, pork, and poultry products. We have built strong relationships with our partners that do business in retail, food manufacturing, healthcare, hospitality, and all the way up to Fortune 500 companies across the globe. At CMA, we strive to make sure every case that our team sends out is packed with quality meat that every partner can trust to satisfy their hungry customers. After all, CMA would not be where it is today without our loyal partners that we have grown with over the last three and a half decades. What's the Holiday Season without a Holiday Party!? 🎄 Last Friday, our office staff celebrated the season with our in-office Christmas party. We had a Christmas-themed outfit contest, a gift-swap, and of course lots of delicious food and drinks. As always at CMA, a great time was had by everyone! Last Friday, our Chicago Meat Authority team came together to celebrate the hard work and dedication of our entire with a fantastic luncheon! It was a great time filled with delicious food, lots of laughs, and even some raffles (three employees took home brand-new TVs!). Overall, it was a great day for our entire team and the perfect way to get everyone in the holiday spirit. Thank you to everyone from CMA that was involved with putting this together! 🥩🎄
