Gideon Yim, Corporate Chef of Griffith Foods was inspired by his mother who he refers to as the “queen of substituting ingredients”. According to Gideon, “She taught me how to swap out ingredients to create something unexpected”. For example, using soy sauce instead of salt and deglazing a pan with mirin instead of white wine. Gideon even learned how to use scissors in place of knives and cutting boards because it proved to be a more efficient tool with less cleanup.
