About us

Our mission at Flat Iron is to make remarkable steak accessible to all. Not just that, we also try to look after all our guests as if they were old friends. Everyone is welcome. To do that, we have an amazing team of great people who love what they do and love working at Flat Iron. So much so, that for three years in a row we have been voted one of the UK’s Top 100 Best Companies to work for. We have won many other awards but being listed as one of the best employers in the country is something we are incredibly proud of. Our team is everything. If we select an amazing bunch of people, give them the training and the tools they need, then try to make Flat Iron the best place they have ever worked, we can’t go too far wrong.   • Royal Festival Hall Flat Iron, on the Southbank is now open. What a journey! We kicked things off by giving away 500 Wagyu steaks, and it was a brilliant way to welcome both our guests and our team to this new space. But the real moment worth celebrating? Watching our team find their rhythm, support each other, and their hard work has made this opening what it is, and this is just the beginning…

    This is team Southbank on their very first day 🖤 Whenever I meet new team members, I always ask: What were you expecting before you joined us, and how has the experience met or not met those expectations? I believe seeking this feedback makes us better. It’s even more powerful when the data supports the story – turning anecdotes into insight and even better when your not expecting it to come your way... 🏆 You may have guessed by Abi Dunn's teaser, this week we were recognised by This.Is.Pineapple (our industry benchmark) for achieving the best reduction in 90-day turnover over the past year. 🏆 We were also awarded 3 Stars by WorkL for “Excellent Employee Experience.” I’m not claiming we’re the best place to work for everyone, because I know that's specific to each individual – but I do aspire to be one that stands out from the crowd as a place where people can truly work and grow. ❓ So tell me, in your opinion, what makes a workplace stand out from the crowd?     Flat Iron are getting a This.Is.Pineapple Shout-out. 📣🍍 Over the last 4 reports they saw the greatest reduction in 90-day turnover. 👏🏻 We spoke to Gina Knight about what they have been up to and here are some of their marginal gains:- 🥩Identifying how long it takes for someone to be fully confident at the basics and giving Restaurant Managers training hours to deliver it, outside of their labour model. 🥩Making tasting the entire menu a part of every newbie's day 1 experience. 🥩Designing new inductions for all roles that have a blended learning approach. 🥩Ensuring new managers in training receive regular check-ins from their Operations Manager and the Talent team. 🥩Being honest about role expectations and working hours, being super realistic from the off. 🥩Identifying what great performance looks like at all levels and supporting managers to identify it with a framework and give meaningful feedback. 🥩Timely recruitment and better hiring decisions from managers on team member appointments. 🥩Taking listening seriously by publishing a measurable action plan on the back of engagement surveys. Which in turn leads to engagement being the highest it’s ever been. ❓Finally, we asked Gina ‘How do you use the Pineapple Report?’ “It's hard to know what good looks like if you're shooting in the dark. We've been asking ourselves whether we're developing our people quickly enough to meet our growth needs, while also wanting to be fair and give them the right amount of time. The benchmarking data reassured us and gave us clear areas to focus on. By using this data, we gained confidence in our succession planning. It proved that we simply needed to allow more time for our AGMs to develop. The report has also influenced decisions in our budgeting process. By recently reviewing our vacancy percentage against the industry, we identified one role that required additional support. The data also confirmed that this isn’t just our challenge… it’s an industry-wide issue. Armed with these insights, we successfully secured the budget needed to support this role, ensuring we stay ahead of the curve”. Congratulations Gina and team Flat Iron .   • We’re lucky to have our very own butchery at Covent Garden, where Scott, our incredible Butcher, turns exceptional cuts of beef into something truly special. Butchery is a craft – one that takes patience, skill, and a deep love for the art. It’s this love for learning that brought Jorge to a new chapter in his Flat Iron career. Jorge started in our Central Kitchen, perfecting the chips you all know and love. But behind the scenes, he’s always been curious about beef, carving, and what happens behind the butcher’s block. When the opportunity came to explore that curiosity, Jorge jumped at it. He’s now joined our butchery team to learn from Scott and take his first steps to become a butcher. We’re so excited to see his passion grow and watch him sharpen his skills, one cut at a time.

    What happens when you truly listen to your team? More than we ever expected… Many team members at Flat Iron told us the same thing in our engagement survey: “Our aprons are too light in colour, hard to iron, and uncomfortable.” So, we listened. We didn’t just make a decision, we brought the team into the process: ✅ 10 fabric samples ✅ 5 apron styles ✅ 20 colour options ✅ 20 team members in a room Together, they chose what worked best for them. But that left us with one big question… What should we do with the old aprons? At first, we thought team members could keep them and retire them at home. Then, our team members came up with an even better idea - Recycle them into something new and creative. And WOW… we never expected the joy, creativity, and innovation that would come from this. Here’s just a little glimpse of what our team members have created and shared with us… 👀♻️
