Chartwells Independent is proud to create outstanding educational experiences for pupils across more than 100 collaborative food partnerships. Independent school caterers who truly care, we always go above and beyond to sow the seeds for pupils to make lifelong positive dietary and lifestyle choices. We bring our heritage and experience to each of our partnerships, with every decision made by our trusted teams focused on the health of our pupils and planet. We’ve worked alongside independent schools for more than 50 years and are pleased to continue creating inspiring food experiences based on the core principles we’ve always kept.   • Supporting sporting excellence. Last week, some of our esteemed schools competed at the prestigious Rosslyn Park National Schools Sevens – the world’s largest rugby tournament with over 15,000 boys and girls competing annually. At Chartwells Independent, our holistic vision is to nourish young minds and bodies, enabling students to excel both academically and athletically - and national tournaments like Rosslyn Park are no exception. In the lead-up to the tournament, our dedicated team of nutritionists at #BrightonCollege, #MillfieldSchool, #SherborneSchool and #RugbySchool were on hand to provide tailored support to ensuring the athletes were optimally fuelled for competition. Jack Blades, Lead Nutritionist at Sherborne School, developed targeted sports nutrition resources, including nutrient analyses and practical Eating Out Cheat Sheets. These tools empowered players and coaches to make informed food choices both on and off campus, focusing on effective fuelling before matches and promoting recovery afterward. Jack emphasised, "These resources aim to make performance nutrition more accessible, informed, and integrated into the tournament environment, helping Sherborne athletes perform, recover, and repeat at the highest level." Youth Development Nutritionist Daniel Alcock, Millfield School, conducted personalised one-on-one sessions with players and was on-hand during the tournament to provide individualised strategies, ensuring each athlete's nutritional needs were met during the demanding competition schedule.   • Inclusive dining for all.   At Chartwells Independents, we’re proud to push the boundaries of what’s possible when it comes to catering for children with coeliac disease as well as other dietary requirements, including food allergies and intolerances. With nearly 1 million medical diet meals served annually, we’re dedicated to making every mealtime as enjoyable as possible for every child.   Our Medical Diet and Culinary teams, working collaboratively, have designed the Allergen Bar to provide a safe space for all pupils with a multitude of specialist dietary needs – providing reassurance to pupils and parents alike.   Each Allergen Bar is tailored to meet the unique dietary needs of students, ensuring they can enjoy safe, delicious meals without compromise. Every day, you bring dedication, creativity, and enthusiasm to everything you do, and we could not be more proud.   This month has been filled with exceptional moments, from dragon-themed creations for World Book Day to a vibrant plant-based feast marking the arrival of spring, a spectacular Red Nose Day cupcake display, and inspiring sustainability talks.   • Eid Mubarak to all celebrating As we celebrate the end of Ramadhan and welcome the joyous occasion of Eid, at Chartwells Independent we’re reflecting on the rich, cultural diversity we so proudly celebrate through food and education. We’re delighted to support students and staff during significant traditions and reached out to Sukaina Abdulhussein of Sukaina Nutrition and former colleague, for her thoughts. “As we gather with family and friends to celebrate this joyous occasion, it’s natural to enjoy the variety of delicious food and sweets. But let’s take a moment to remember the importance of mindful eating. Eid isn’t just about indulging; it’s also about sharing, kindness, and gratitude. So, let’s practice balance: savour the flavours, enjoy the company, and listen to what our bodies are telling us. This means tuning into our bodies, honouring what feels good, and allowing ourselves to enjoy sweet treats without guilt.” If you find yourself with too many indulgent treats at home, why not share some with friends, family, or neighbours? It’s a wonderful way to spread love and joy, while also keeping your health in check. Also, consider adding something nutritious to those sweet treats to help manage blood sugar levels, for example, enjoy cake with some fresh fruit or a spoonful of yoghurt.   • Celebrating Tony’s incredible achievement   At Chartwells Independent, we take great pride in celebrating the achievements of our people, both in and outside of work. Tony Claramunt Catering Manager at Hampton School and a highly valued member of the Chartwells Independent family for over 11 years, embodies the passion and resilience that we continually strive for. Recently, he reached the extraordinary milestone of completing the World Marathon Major series – a phenomenal achievement!   For Tony, football had always been his sport of choice, however a milestone birthday encouraged him to embrace a new ‘keep-fit’ routine – running; a fitness routine that soon became a lifelong passion and led Tony to complete his first London Marathon in 2017. Having ignited his ambition, Tony decided to take on an even greater challenge - conquering the World Marathon Major series.   Reflecting on what keeps him motivated, Tony shares: "Staying fit is a great motivator, alongside really enjoying the marathons themselves - the places they take you, and the incredible people you meet along the way. Marathons are very social occasions! Running has also been a huge boost for my mental health - just being outside and being able to let your mind wander. I’d recommend running, or any outdoor activity really, for positive mental well-being."   Tony’s journey is a true testament to his dedication and determination. He admits it hasn’t always been easy but describes the experience as deeply rewarding: "It’s absolutely been challenging, but it was so enjoyable! When you complete any challenge, there’s a deep sense of satisfaction, but, of course, you’re always looking for the next thing."   And what’s next for Tony?   • We’re over halfway through Ramadhan…    At Chartwells Independent, we take pride in embracing rich cultural traditions through food and education, ensuring every pupil feels seen, valued, and nourished - both physically and emotionally. As part of our commitment to cultural appreciation, we tailor our approach to meet the needs of students observing important traditions, like Ramadhan. Sukaina Abdulhussein – founder of Sukaina Nutrition and former Chartwells colleague - recently shared her recommendations on how to help make it a positive and balanced experience while at school:   Stay Hydrated – Drink plenty of water during Suhoor (pre-dawn meal) and Iftar (meal after sunset) to keep energy levels up throughout the day. Eat Nutritious Foods – Focus on balanced meals with protein, healthy fats, and slow-releasing carbohydrates to keep you feeling full and energised during the day. Practice Mindful Eating – During Iftar, it’s easy to want to pile your plate high with food. Instead, think about typical portions and eat slowly. This will help prevent bloating and feelings of overfullness! Support Your Gut Health – During Ramadhan, gut health may be impacted. Try to incorporate as many colourful foods as possible during Suhoor and Iftar. The more colour, the more vitamins, minerals, and fibre you’ll get in your diet. Mind Your Sugar Intake – It’s common to crave sweet treats, especially after Iftar. While it’s fine to enjoy biscuits, cakes, and puddings now and then, try to choose sweet options that nourish you. A great dish to curb your craving is a date smoothie - try Sukaina’s delicious recipe for a healthy and nourishing dessert. Be Kind to Yourself – Fasting can be challenging, but it’s also a time for personal growth. Remember, it’s okay to ask for support when needed.   Here’s to sharing delicious moments across all cultures, fostering a sense of belonging for all.   • Flying the flag for Women in Food We’re incredibly proud of talented Brighton College chef, Antonia Barrett, who has been showcasing her exceptional pastry skills today at International Salon Culinaire. Despite this being her first time competing, Antonia was awarded the International Bronze medal – an absolutely fantastic achievement! Antonia joined Denise McGrenra and the Brighton College team in July 2024, bringing a wealth of culinary expertise from working with Hugh Fearnley-Whittingstall at River Cottage Winchester and at The Pig Hotel in the New Forest. Her journey has also taken her to Belgium, where she honed her patisserie craft at Marijn Coertjens in Ghent (Artisan patisserie and chocolateries), as well as in local Brighton bakeries. Our wonderful Brighton College client commented: "We are so proud of Antonia and her amazing culinary skills on show at the prestigious Salon Culinaire.   • Celebrating culinary talent. Huge congratulations to Ketan Naik from Beaudesert Park School for producing three stunning starters at International Salon Culinaire this week. Despite the pressure of competing in his first ever competition, Ketan delivered an incredible performance and took home the International Bronze Medal. Ketan’s delectable creations wowed the judges and included: - Cured Salmon, Horseradish Foam, Pickles - Pressed chicken, Liver Parfait - Onion Bhaji, Vegetable Slaw, Curry Sauce, Coriander, Lemon Gel – a dish inspired by his grandmother, which the judges particularly loved. Ketan’s achievement is a testament to his talent and determination. Since joining Beaudesert in October 2024, Ketan’s talent has shone through as Pastry Chef and also the passion he brings to every dish he creates. Chartwells Independent Culinary Director, Rob Kennedy, commented “Ketan is an unbelievable talent – the foundation for our future” and we couldn’t agree more.   • Championing culinary excellence.   Huge congratulations to Max Faulkner, Cluster Head Chef for Chartwells Independent at Rugby School, for his incredible win yesterday - Gold Medal and Best in Class in The Duck Culinary Showdown at International Salon Culinaire. Held alongside HRC, International Salon Culinaire is one of the most esteemed chef competitions in the world with a rich heritage of 122 years and the live Duck Culinary Showdown was the biggest international event of the day! With 16 competitors, over two heats, the competition was stiff, but Max delivered an exquisite plate of Truffle Honey Glazed Breast of Duck, Black Garlic Stuffed Morels, Butter Poached Turnips, Duck Heart Brochette, Crispy Kale and Fermented Green Peppercorn Sauce to be crowned Overall Winner.    It has been a sensational six months for Max who won Silver at the Compass Senior Chef of the Year in October 2024. At Chartwells Independent, we truly believe that people are our greatest asset.   • Celebrating International Women's Day As International Women’s Day falls on a Saturday this year, it was wonderful to see the Women in Food Network come together on Thursday for an #InclusiviTEA - a chance to reflect, connect, and discuss how we can all #accelerateaction for gender equality. We are incredibly proud to have strong female representation and leadership across the entire Chartwells Independent family. Managing Director, Noelle Jones, leads by example to create a truly inclusive culture for every colleague, whatever their role or gender. Noelle shared her advice on how to #accelerateaction to create more opportunities for women to thrive: Lead by example: “Inspirational leaders create a path for others. When women step forward, they inspire others to do the same. As women, we need to put ourselves forward and take those opportunities to continue to drive that progress”. Allyship matters: “Gender equality isn’t just a women’s issue. Support from male colleagues and mentors plays a key role in breaking down barriers”. Visibility and balance: “Creating a supportive environment and promoting work-life balance helps teams succeed and ensures everyone has the opportunity to thrive”.
