What an incredible experience at South Summit #Scaleup Series Europe - Oslo! The future of hospitality is waste-free - but technology alone won’t get us there. I was honored to be invited to contribute to this year’s Hotel Yearbook for Hospitality Net, sharing my perspective on why AI is a game-changer in the fight against food waste - but not a silver bullet. My thoughts? 🔸 Food waste is hospitality's hidden cost. It is no longer just a sustainability challenge - it’s a financial and regulatory risk. 🔸 Leading hotel groups like Hilton, Marriott, and Mandarin Oriental are proving that AI, paired with a strong waste reduction culture, delivers real impact. 🔸 Owning groups are also stepping up, embedding waste reduction into their ESG strategies to drive profitability and meet investor expectations. At Winnow we’ve consistently seen that the biggest success stories come from hotels that don’t just adopt technology - they make food waste a priority in their operations, leadership, and culture. Seeing Hilton scale their annual Green Ramadan campaign to 40 hotels this month is testament to that - just 2 years ago, they piloted the campaign with 3 hotels delivering a 60% reduction in waste.
