As a restaurant operator, it can be challenging to accept all manner of customer special requests. But it’s increasingly important that a consumer can have exactly what they want. According to Datassential's Personalization and Customization Operator Check-In report, nearly three-quarters of operators say menu customization has become more important to consumers in 2025, with over half handling more custom orders than a year ago. And despite the frustrations for kitchen staff or the resistance by consumers to pay more for substitutions, 82% say it makes patrons more likely to return. #coolstat #restaurants #menutrends #customization #foodservice

PICKLES! This week, Dutch Bros and Popeye's launched pickle beverages. And, yes, we double checked: neither was an April Fool's Day joke. Dutch Bros did a "Pickleback Rebel," which they describe as a "Blended energy drink with a pickle juice twist." Popeye's launched an entire pickle-packed menu, capping it off with pickle lemonade. Some folks might be surprised, but our team saw this one coming. It started as a street fair/state fair/theme park oddity, but pickle is gaining traction on everyday menus. It taps into that nostalgia for summertime at the state fair, while pushing flavor boundaries just enough, which Datassential would call "newstalgic." Innovative automated and dispensed technologies are popping up everywhere. One reason we’re seeing this is that consumers have become accustomed to the on-demand nature of modern life. To keep up, operators must find ways to automate. All of our products are packaged in an aseptic carton. We use aseptic processing because it has many benefits. One of the biggest benefits is that the products have an extended shelf life. Aseptic processing involves sterilizing both the product and the packaging separately, then combining them in a sterile environment, which you can see happening in the video below.
