About us

The spirit of Wahaca was born from a love of honest Mexican market food, the sense of community that went with it and Masterchef winner Thomasina Miers and Mark Selby’s desire to share this experience with anyone that wants be part of it. Wahaca is a journey from the markets of Oaxaca (Wa-ha-ca), the culinary heart of Mexico, and is a growing, exciting, innovative company. Our aim is to provide an environment as enjoyable for our teams as it is for our guests, by consistently delivering Mexican inspired market food and great service in a lively, vibrant atmosphere. We know we can only achieve this through commitment to our people, this why at Wahaca we live by our values and believe that you should work hard and play harder. And we do. Between monster shifts and regular socials there is never a dull moment in our markets!

    Introducing our new summer menu - available today at all our Wahaca restaurants! Thomasina Miers, Jenny Idle, Justin Anderson, Carolyn Lum and the rest of our food development team have been working tirelessly on our new seasonal specials for months and it has all paid off! Our new specials deliver the vibrant flavours of Oaxaca - expect more heat, more citrus and something spikey… A couple of weeks ago we had the pleasure of introducing these new dishes to our chefs for the very first time, and, of course, we took the opportunity to get some snaps.

    This month we’ve got some special work anniversaries to shout about, from front of house, to our central support team, each and every one of them has played a key role in making Wahaca into the place it is today. Adrienne, who is currently on maternity leave, has been with us for 5 years. Francy, General Manager at White City, has been with us 11 years. Carla, Assistant General Manager at Canary Wharf, has been with us for 12 years. Monika, Holding General Manager at Paddington, has been with us for 14. Carolyn, Sustainability Lead in our Central Support Team, has been supporting us right from the start. What a brilliant team we have!

    Last week, the General Managers of each Wahaca restaurant came together for a rather unique bonding experience. Off with the aprons and on with the trainers, they spent the afternoon tackling the fundamentals of punches, kicks, and elbow strikes. Who knew Muay Thai could be so fun?

    It’s important to us that our team get to experience the beautiful people, landscape and food of Oaxaca first-hand and see where Thomasina Miers and Mark Selby got their inspiration from all those years ago. So, If you’ve worked at Wahaca for 2 years, front and back of house, you get to go and experience the real Oaxaca, on us! Earlier this month, 8 of our team members got some winter sun and in the words of Ramachandra Reddy Rakshith, Floor Supervisor at Oxford Circus: “Wahaca London to Oaxaca Mexico—what a ride! It was an incredible roller-coaster experience exploring Mexico for two weeks with my craziest and closest friends. We had so much fun, even though traveling long distances isn’t easy. But we made it all happen in such a lovely and memorable way. Oaxaca itself is such a peaceful and colourful city, surrounded by stunning mountains and rich in traditional art. The food was absolutely amazing! I was blown away by how welcoming the people were; they treat everyone like family.  All in all, it was a much-needed and peaceful adventure that I’ll cherish forever!”

    Shout out to Henry Dimbleby, Nicole Pisani, Joanna Weinberg and our cofounder, Thomasina Miers, for driving change and shaping a better future for generations to come. The benefits of replacing ultra processed foods with nourishing meals made with fresh, real ingredients are endless and essential. We're so proud to be a part of this incredible initiative.

    I’m incredibly proud that Wahaca is now supporting Chefs in Schools, a charity that started with Henry Dimbleby Nicole Pisani Joanna Weinberg and me sitting around a table at Wahaca in Oxford Circus talking about how school food was something we all wanted to fix. As a trustee, I’ve seen firsthand the incredible impact they are having, in 139 schools to date proving, despite what many caterers and large food companies would have you believe, that it’s not only possible but essential to serve fresh, delicious real food in schools. In just over six years, we’ve transformed the food for thousands of children replacing ultra-processed, beige food with proper, delicious cooking that helps kids thrive. This morning I was in the Houses of Parliament with @chriswebbMP Anna Taylor Naomi Duncan and Dr Dolly van Tulleken hearing how critical this work is…amd a special Shout out to Amber Francis in the last pic with me who is currently a Chefs in Schools chef in North Finchley (ex The Dairy, ex Ritz) and also starring in Great British Menu from Optomen Television 🥦 Did you know that children today in the UK are now shorter than their parents? That their health outcomes are worse? 🍅 Did you know that in England if your household income is over £7,400 you no longer qualify for free school meals? That is £7400 a year across the entire household?!!! Who here has tried to survive on that with kids in the room? 🍊Did you know that in the UK there are 900,000 children living in poverty but who are not eligible for free school meals? With School Meals Day on 14th March, we should be demanding better. If we want the holy grail of growth we need to fuel learning with decent food, not hinder it by starving our future workforces. Good food in schools is proven to set kids up for healthier futures, helping to fight back against the relentless rise in diet-related diseases. Did you know for every £1 invested in feeding children at school, Government gets back £1.71 in better outcomes for its future workforce? This is a fight for our children’s health, for their futures, and for the planet. Change is happening and I could not be happier that Chefs in Schools is now Wahaca’s UK charity partner.     What a milestone! We can’t believe it’s been 10 years since Cris joined the Wahaca team. Having worked across nearly all of our London restaurants, spending the most time at Oxford Circus and Waterloo, his infectious energy and passion for hospitality have had a lasting impact. During his time with us, he has not only grown in his career but also welcomed two beautiful children into his family. A major Arsenal fan, we thought the only way to celebrate would be with a Wahaca jersey in his team’s colours. Congratulations Cris, here’s to many more years.
