Hello We're the Spirit of Yorkshire. We're Yorkshire's first whisky distillery and we make our single malt from field to bottle, here in Hunmanby, near Filey on the Yorkshire Coast. We love welcoming people to the distillery, running tours three times everyday (twice on Sundays) and with full-day Distilling Experiences running once a month. Our first new make went into casks in Spring 2016. In October 2019 we were very pleased to launch Filey Bay Yorkshire Single Malt Whisky. The first ever single malt whisky made both in, and of, Yorkshire. Our philosophy is all about respecting tradition but doing things our own way. We are a fully field-to-bottle distillery, farming and growing all our own barley, using water from a source on our farm, and making both the wash and then the new make spirit ourselves. We have a unique distilling process too, introducing a column still, as well as a pot still. This all comes together to produce something unique to our region, that is recognisably our own style. It’s been a big week for whisky. The English Whisky GI (created by the The English Whisky Guild) has been put up for consultation by DEFRA after over four years of work with a very strong focus on keeping quality standards high. The Scotch Whisky Association has immediately issued rebuttals, based specifically on the aspect of separate sites for mashing and fermenting, to distillation when it comes to single malt. We work across two sites to make our award-winning Filey Bay Yorkshire Single Malt Whisky, making use of our long-time expertise as barley farmers (since 1945), brewers (since 2003) and distillers (since 2016). We absolutely believe in maintaining the quality set by Scottish distillers and in other countries around the world, and everything we do in our production process, from field to bottle using 100% homegrown barely, is testament to this. In fact, our ethos is ‘respecting tradition but doing things our own way.’ In the spirit of working in a united way, we’ve invited John Swinney, the First Minister of Scotland, and Graeme Littlejohn and Mark Kent, from the Scotch Whisky Association, to come to our farm, distillery and brewery to hear, see and taste the quality of our award-winning whisky. We’ve also asked them to extend this invitation to other relevant MSPs and members of the SWA, and we really hope they come to see us. We're incredibly excited about this time for English whisky, and we look forward to continuing to make first-class Yorkshire single malt whisky.

Tom Mellor knows a lot of things about a lot of things. He has farmed the land at Hunmanby Grange Farm in North Yorkshire for some 40 years, as did his father and grandfather before him, so there’s very (very!) little he doesn’t know about growing barley. More than 20 years ago now, Tom founded Wold Top Brewery Ltd to make best use of the barley he grew. He taught himself how to brew beer and over the years has come to know how to run a successful micro-brewery. Then, in 2016, he decided to set up Spirit of Yorkshire Distillery with his good friend David Thompson. The pair operated the stills themselves for the first year, so know how to make whisky, and they released their first expression under the Filey Bay name in 2019. Yep, Tom Mellor knows a lot of things about a lot of things, but there’s one thing he knows that is perhaps more important than everything else put together. “The best thing you can know is knowing what you don’t know,” he says. “Once you understand that you don’t have to know everything, or you don’t have the answer for everything, then you can start to look for it.” That’s the approach for this journal: we find something we don’t know about and then go looking for answers.
