Aujourd’hui, 80 % des amandes consommées dans le monde viennent de Californie, où le modèle dominant repose sur une monoculture intensive : sols nus stérilisés chimiquement, pollinisations artificielles, et jusqu’à 12 000 m³ d’eau par hectare et par an pour irriguer les vergers.
