Prefer WP for full control. Regarding products number I have experimental project with more than one million of products in Woocommerce and works super fast. Yes, it’s not default setup, it has ElasticSearch, some server setup, caching etc, but in general it’s possible to use Woocommerce with thousands of products without any problems.

Depends on how many products and how much support you want. I'd go with WordPress if it's a smaller number of products and I can manage them on my own. I'd go with Shopify if it's a large number of products (over 50) and I want a support phone number to call for help.
