Congratulations to our talented chefs, Lam Yuk Ming and Anne-Sophie Nicolas, and the respective teams for securing their Michelin star at the 17th edition of the MICHELIN Guide Hong Kong & Macau 2025. This marks the ninth consecutive year for Spring Moon and the sixth consecutive year for Gaddi's, highlighting their culinary and hospitality excellence. In addition, Gaddi’s has been honoured in the South China Morning Post's 100 Top Tables Awards 2025, making it our twelfth consecutive year on this prestigious list.

What an accolade! Being able to consistently produce the quality required year-on-year is a demonstration of talent, dedication, and determination of outstanding proportions. I grew up in a kitchen and cooked alongside my mother from the age of 5. The greatest lesson I learnt was that the kitchen is not only the kitchen, it's the market, the farmers and all those that help you to get that immaculate presentation just at the end of its journey. Cooking is an art, and food is a medium, and you have demonstrated that you have mastered the culinary arts. I would like to provide you all with a heartfelt congratulations. I tip my hat to you.
