[THE GRAPE HARVEST] 🍇🌿
Between August and October, the grape harvest is the talk of the town.
But what is the grape harvest?
Grape harvests are prepared for and, above all, are carried out in stages:
🍇 Harvesting the grapes: Harvesting is the process of picking grapes to make wine. In Provence and in our region, we prefer to harvest at night because heat is the main enemy of wine. Harvesting at night preserves the freshness and firmness of the grapes, prevents them from colouring or fermenting too early, saves energy and protects our teams from the heat.
📅 Time of year: Harvesting generally takes place between late summer and early autumn, depending on the region and the ripeness of the grapes. With global warming, they are starting earlier and earlier at Château d'Astros.
🌱Maturity of the grapes: The grapes are picked when they reach full maturity to guarantee the best quality wine. At the estate, this year is a special one: following the frost, we are lucky to have very disparate maturities depending on the plots and the bunches from a second flowering. We pay particular attention to the last bunches (acidity, sweetness...) to determine the perfect moment and offer the best possible juice.
🚜 Harvesting methods: Harvesting can be done by hand or by machine, but at Château d'Astros it is done mechanically, as the terrain does not force us to harvest by hand. We are lucky enough to have a highly precise machine with sorting and de-stemming carried out directly in the vines. It can be adapted to each grape variety, so that the harvest can be taken directly to the press in the best possible conditions!
🍷Wine preparation: Transported to the cellar, the grapes are stripped of the last leaves or solids, pressed, and fermented, beginning the winemaking process.
🎉 Key moment: The harvest is a crucial and festive moment for us, marking the start of the new vintage. A new wine, a new delight on the palate!
