Today, I had the opportunity to train with the Fresh Cuts team at Baldor Specialty Foods, and it was an incredible experience. As someone with a culinary background, seeing how Baldor processes and prepares its Fresh Cuts products was both familiar and inspiring. The precision and care that goes into creating perfectly prepped ingredients reminded me of working the line in a busy kitchen — except here, it’s on a much larger scale. Every cut, every piece, and every package reflects the same commitment to quality that chefs expect when they’re preparing dishes for their customers. This is admittedly a reductionist take, but the highest ROI hire for a co-man in food and beverage.. is in food safety. There’s literally hundreds of moving parts at these co-man facilities, with dozens of team members keeping things humming, but let’s put this into context, I just spoke with a buddy of mine who works in a rapidly growing, fast-paced facility. He was in the middle of an SQF audit with contracts worth millions riding on their passing. What surprised me, is he wasn’t stressed - or even involved (which was not the case prior to this hire) He knew his food safety guy was on it, trustworthy and prepared. As of today they are SQF certified, just in time to start trials for one of their biggest clients. On average this one hire might cost a bit over $100k/yr but in this instance, put almost $10 million on the table. This doesn't even begin to get into the weeds of food safety itself, and its prevention of recalls, quality liabilities and other nightmare scenarios. To the untrained eye, an OG plant manager or big time sales lead might seem like the highest leverage hire But it seems to me food safety is where the ROI hits differently.
