I've just published an article that challenges what we think we know about premium whisky. While the industry obsesses over single cask releases, Highland Park's latest masterpiece tells a far more fascinating story. Imagine Scotland, 1968. At Highland Park's wind-swept Orkney distillery, 10,000 casks were filled with new-make spirit. Each one identical. Each one holding the same promise. But time is the great differentiator. In my interview with Master Whisky Maker Gordon Motion, he revealed how these seemingly identical casks evolved on radically different paths over five decades. Some succumbed to the angels' share. Others lost their strength. A precious few developed extraordinary characteristics. Motion describes it beautifully - like a great tree, where thousands of roots eventually lead to just a few main branches. From those original 10,000 casks, just ten were chosen in 2008. These were married into five special casks, each developing its own distinct personality over another 16 years. The result? 170 bottles of Highland Park 56 - each one a time capsule of decisions made across half a century. It's not just a story about whisky. It's about how time, patience, and a willingness to let nature take its course can create something truly extraordinary. Redefining Canadian Whisky And Mash Bills vs Grain Bills Nick Taylor is no stranger to blending - he hit 40 Scottish distilleries in 30 days pretending to be a whisky writer (and no, I asked, he wasn't caught!), and has since visited Ireland, Japan, and most of the distilleries in Kentucky, not to mention Canada. Bottom line, he knows that you don't have to distill to create something exceptional. In creating Found North with his partners, Nick is taking on a monumental task - redefining Canadian whisky for an American market conditioned to see Canadian as lesser, inferior, or just plain bad. The big brands don't do themselves any favors, but then again they don't have much incentive (we get into that), so it's up to the small guys like Found North to crack that nut. In a fascinating exploration of the art and science of whisky blending, Nick reveals how synesthesia and musical influences spark creativity in crafting harmonious blends, from classical to funky things even I had never heard of before. Denominations of Origin (DO) play a key role in making spirit categories attractive to investors. They guarantee authenticity, safeguard the product's heritage, and protect the industry from counterfeit versions. This not only helps maintain market value but also creates scarcity, as strict regulations are put in place to uphold the standards set by the DO.
