That commitment is on full display this week at Moda Center, where the Green Sports Alliance hosts a symposium highlighting how the arena and nearby venues are spearheading change through innovation and reusables. Our sustainability team, led by Vice President of Sustainability Mary McCarthy, will share alongside our Oregon Convention Center partner how the programs Levy is leading at the Moda Center, the convention center, and across the country are key to scaling-up reusable systems in large venues.

    It may be March, but we’re already in the homestretch of menu planning for the 151st running of the Kentucky Derby. When you’re crafting menus for nearly 160,000 guests and one of the most unique and vast premium hospitality experiences anywhere, it’s truly a year-round process. Food & Wine joined our chefs and wonderful partners Churchill Downs Racetrack to explore that process. Learn how we work in-tandem with local Kentucky Farms and area purveyors to create menus that showcase the best, in-season produce and products – all delivered on a massive scale where technique and creativity meet precise execution.   • This season, Delta Center debuted its new Mountain Menu, a fan-friendly offering built around the items Utah fans enjoy most.   • While studying at Indiana University in the 90s, planning out his future, Lathay Pegues had a bright idea. One that blended family and business: re-create his grandfather’s iconic barbecue sauce, a family recipe that had never been written down, based on his memory of the ingredients. It took him nearly five years to create the JohnTom’s BBQ original sauce, and it is now served at multiple Levy-operated college sports venues.   “The way I approach work is the way my grandfather, John Tom Branson, approached the craft of barbecuing. It was more than a pastime for him. It was his pure passion. He took pride in the entire process, from meat selection to the detailed smoking method,” said Pegues. “I watched this as a kid and soaked it all in for years. I had no idea that one day I would carry on my grandfather's tradition of providing quality BBQ sauce for the masses to enjoy.”
