One of the more most important aspects of problem solving is actually problem definition. Sometimes people are trying to solve the wrong problem, but since everybody has the same blinders on they can't really see past it. I would say one way that you can demonstrate problem solving is to describe a situation in which you were able to point out to your peers that the proximal problem was not the underlying problem, and making that shift in perspective really led to a breakthrough. Obviously this relates more to somebody with some prior experience, not necessarily a junior designer, but still I think it shows that you have problem solving skills beyond the norm.

One of the basic principles of brainstorming is not to oppose ideas, neither one's own nor others'.
