If you are using an LLM, assume any data directly accessible by the model, e.g., data available via RAG, is accessible by anyone using the model. Prompt hacking is simply too easy. It's best to assume all data is available to anyone with model access. For more sensitive data, call external APIs where you can properly authenticate and secure access. The model can determine the API and parameters, but access controls will be done through the API. I am NOT a fan of using LLMs to write SQL and give the user results. To do so is akin to letting your users have access to query the DB directly. Even with DB access controls, would you allow this? Models are very "helpful" and will write SQL to access all available data.

Data protection of the client must always start with good security. Apply a strong framework of security that involves, encryption, access control, and frequent audits to protect sensitive information. Ensure that this data is available only to authorized persons. In many cases architects tend to utilise multiple systems just to move data from where they reside to AI engines. This is not necessarily. Modern databases like Oracle 23ai supports vectorisation on database level. No need to move data. You just point towards 23ai and get vectorised data without any need to transfer it or transform it. For older systems you can use Oracle GoldenGate 23ai which again supports vectorisation for any source. For example you run some legacy Oracle database on-premise Exadata? No problem you connect GoldenGate 23ai and you get vectors without need to touch underlying infrastructure.
