So yes, do take a note of evaluation metrics, they are there for a reason, but then between models with 10-15% difference in scores, you might find results which will surprise you.

I'm missing the part which comes after the first deployment - the long-term management. So, MLOps is still underrated in the early phase of an ML project and will quickly become the biggest time-waster if not implemented from the start.

We are trying to explore a new world and in exploration it is important to keep on moving even if you do not find gold anywhere :-)
