In section 6.1.13 XHTML Output Method: the include-content-type Parameter the
string "application/xhtml-xml" is an error for "application/xhtml+xml"

Thank you for catching that typographical error.  I'm marking the necessary
editorial change you suggested in comment 0 as Serialization erratum E3.
