The Mineral Shift at the World Cup in Åre, Sweden! ⛷️🏆 During the Alpine Ski World Cup in Åre, skiers like Moa Boström Müssener and Hanna Aronsson Elfman got to taste a snacks innovation made from hydrothermally treated Swedish chopped whole grain rye with a fruit and berry compote. “A perfect snack”, was one of their comments. Råggyberry is made by using a technique called hydrothermal treatment, which increases the availability of minerals like iron and zinc. This process breaks down about 99% of phytic acid, making up to four times more iron from grains available to the body. The innovation was developed by Hidden in Grains at Torsåker Farm, in collaboration with Axfoundation, within The Mineral Shift project, involving a wide range of stakeholders, from mills to retailers. 🤝 MatLust Utvecklingsnod Hidden in Grains Warbro Kvarn Chalmers University of Technology Urban Deli Dagab Vinnova Generation Pep Axfood
